Home Made Chocolates

We use Chocolate slabs to make chocolate. which is also known as coocking chocolate.. 1) sweet slab..  2) bitter slab..
Sweet slab is sweet in taste & Bitter slab is strong bittern in taste. we can take them in proportion of our taste. here we will use them in 2:1 proportion.




* Melting Method :-

Ingredients :- 2 slab sweet chocolate.
                    1 slab bitter chocolate &
                     water.

Other requirment :-  2 vessels,  Aluminium foil.

Mothod :- First you take 2 vessels & put one on the top of the others. fill water in the bottom vessel & put the cocolate in the top vessel. cover it with aluminium foil. boil it on high flame for 15 minute. this method is calles tempering of chocolate.

* Beating Method :-

Ingredients :- Melted chocolate slab
                    Palette Knife
                    plain plastic tray

Method :- first you check that there should be no design on plastic tray. it should have plain surface. otherwise chocolate may loose its shining. keep the cool chocolate on a tray. mix both chocolates sweet and bitter. then beat it with palette knief throughly only in one direction. beat chocolate well to to get shining for 5 minutes. you will see its droping on sistency. if bubbles have come then beat it for some more time. you should put off fan or A/C while making chocolate.

1) Simple Moulded Chocolate:-

Ingredients :- Beated chocolates.
                     Mould.

Method :- to make moulded chocolate firt fiill the mould with chocolate. clean the mould properly. keep it in room temperature for 2 to 5 min. of setting. then keep it in fridge, after 2 hours remove them from fridge & again keep in room temperature for 5 min.

2) Truffle :-

Ingredients :- 100 gms. chocolate.
                     20 ml. milk.

method :- prepare melted chocolate & cool it beat it properly. add milk 7 beat again. make small balls 7 keep them in fridge. after few minutes you can use them as center.

3) Tutti - Fruity

Ingredients :- 50 gms Chocolates
                      50 gms tutti-fruity
                              
Method :- Mix tutti fruity in beated chocolate & prepare chocolate.

4) Coconut :-

Ingredients :- 100 gm grated coconuts
                     50 gm icing suger
                    little butter & milk

Method :- mix all the igredients properly & make small balls. your coconut centre is ready.

5) Almond Rocks :-

indredients :- 50 gm almonds
                    100 gm chocolate
                   cheez / butter
                   butter paper

Method :- Roast almonds in little ghee or butter. dip single almond in chocolate. put it on butter paper and allow to cool.

6) Waffer Buiscuit Chocolate :-

Ingredients :- 2 small pieces of waffer buiscuit
                    100 gm chocolates

Method :- cut waffer bhiscuit in to small pieces. dip in chocolate & allow to cool it.

perk :- put chocolate on upper side of 2 waffer slice buiscuit, spread it. put them one on another then put one more slice on top. i.e three layers over one another. keep it to set for 5 minutes. then apply chocolate on all the slices. keep it in room temperature for 5 minutes & then in fridge for half an hour.

7) Fruit - N - Nut :-

Ingredients :- cashew 100 gms.
                     almond 100 gms
                     walnut 100 gms
                     rasins ( kismis ) 100 gms
                     ghee or butter
                     3-4 drop orange oil
                     chocolate 20 gms

Method :- Roast cashew, almond & walnut in ghee or butter. mix roasted nuts, raisins & orange oil in chocolate. pour it in mould & keep it in fridge. you can put a small piece of any nut before keeping in fridge.

8) Flavoured chocolate :-

Ingredients :- 2 bar beated chocolate
                    10 drops of any escence or oil (pineapple, orange, mint, banana
                    strawberry etc.)

Method :- melt the chocolate as above cool it. beat throughly till dropping case in consistancy. add diffrent ecsences 7 put it in diffrent mould and allow to  cool it in fridge.
